It is totally doable !! Our hotel had several families with kids and one couple had twins with them that were no more than 3 months old. I saw lots of families out and about as well :)
We did saint tropez last year and it was lovely but I think Provence would be more child friendly. But France in general is so fab with families! And so easy from Amsterdam
